Fad No More: Food Trucks Go Mainstream

Food trucks are here to stay. Once a novel idea that served up delectable street food, the food truck industry has motored into the mainstream and become a sustainable market segment with many advantages over quick-serve and fast-food retailers.

The National Restaurant Association says food trucks currently account for about $650 million in revenue or 1 percent of total U.S. restaurant sales, and that figure is growing. According to Emergent Research, food trucks are expected to generate between 3 and 4 percent of total restaurant revenue – about $2.7 billion – by 2017.

Quality, value and speed are the top three attributes consumers look for in quick-serve or fast-food restaurants, according to the National Restaurant Association. Food trucks often outperform bricks-and-mortar restaurants in all these areas.
